I've recently read on Twitter that the whole month of January might as well be composed of only Mondays. And it’s kind of true. December was a month long weekend, full of celebration and indulgence. So it only makes sense that January is the month of perpetual new beginnings and resolutions. Every year I make a list of goals that includes eating better, and exercising more. But let me be clear, I do not make a resolution with a weight loss goal in mind. Personally, I find that goals tied to specific weight loss amounts harmful to the end result, which is being healthy no matter your weight and dress size.
The first step to better eating always starts with breakfast. We all know that breakfast is the most important meal of the day. I once heard that it’s because whatever you eat in the morning gets broken down throughout the day. All I know is that eating breakfast not only makes me feel great but gives me the energy to tackle whatever the day throws at me.
I recommend baby steps to tackling breakfast. No need for eggs, and bacon right out of the gate. Oatmeal, and yogurt with granola are great healthy options to start your day off right. I recently made this Maple Pecan granola and paired it with plain yogurt and honey. So start 2013 off right with a healthy flavourful breakfast option.

Maple Pecan Granola
Adapted from Everyday Food
Ingredients
3 1/2 cups old-fashioned rolled oats
1/2 cup chopped pecans
1/2 cup chopped almonds
1/2 tsp coarse salt
6 tsp vegetable oil
6 tbsp pure maple syrup
1 tsp pure vanilla extract
Directions

Preheat oven to 325 degrees. In a large bowl, mix together oats, pecans, almonds, salt, vegetable oil, maple syrup, and vanilla extract.

Spread oat mixture on a rimmed baking sheet lined with parchment paper. Bake for 30 minutes.

Serve topped with natural yoghurt and a drizzle of honey.
