How to Make Spinach & Couscous Salad

What is it about salad?

What is it about the word salad that makes me cringe? We all know the old saying “you don’t make friends with salad”, and in my opinion it’stotally true.  But as much as I’ve always been a comfort food kind of girl, once January rolls around I start thinking about healthy meals and snacks in every effort to attain those resolutions.

Salads as the main course can be a challenge for even the most skilled chef.  You need to make sure the meal has a good mix of protein, vegetables, and in some cases whole grains.  The vinaigrette you use
is also important to the salad’s overall taste and texture.  

When in doubt I like to use this trusty basic balsamic vinaigrette:

1/4 cup balsamic vinegar

1/2  cup extra-virgin olive oil

1 garlic clove, minced

Coarse salt and ground pepper

Whisk together vinegar and garlic. Then while whisking the vinegar garlic mixture add in the olive oil. Season with salt, pepper, and continue whisking until combined.

Recently, I was organizing my week of healthy dinners and stumbled upon this spinach, tomato, and couscous salad. If you haven’t discovered the wonderful world of couscous, you don’t know what you are missing.  It is probably the most versatile grain and extremely easy to make.   Whenever I am craving pasta but don’t want to deal with the carb guilt, I substitute couscous.  This salad is so flavorful and filling you won’t need to go back for seconds!

Spinach & Couscous Salad

Adapted from Everyday Food


3 tbsp extra-virgin olive oil

3 tsp red-wine vinegar

2 tbsp chopped fresh dill

1 garlic clove, minced

½ tsp sugar

Coarse salt and ground pepper

2 cups cooked couscous

1 cucumber, sliced

2 cups spinach

1 pint cherry tomatoes, halved


In a small bowl whisk together oil, vinegar, dill, garlic, sugar, salt, and pepper. In a larger separate bowl combine couscous, cucumber, spinach, and tomatoes. Then add the oil and vinegar mixture and toss until incorporated.
