If you think carrot cake is too dry, too raisin-y or too tasteless, you have had too many crappy carrot cakes, friend. Carrot cake can be airy, moist and delightful if done right.The key is don't over-mix when you add the dry ingredients to the wet. I've been in a real food rut for the past few weeks. Over the weekend, I opened my cupboards and stared for a while. Nothing. Cabinets chock full of food and I could think of nothing to make.So, I took a walk around the block and asked myself a very important question, "When was the last time I had lentils?" I couldn't answer that easily, therefore it had been too long.

I love juice. This isn't news to you if you've spent more than 5 minutes with me at any point in my life. Juice is awesome, and now that I've finally got my own juicer, it's exponentially more awesome because I can create any combination I choose in the comfort of my own kitchen like a tiny juice god. I've been experimenting with all sort of stuff, and below are three of my favorites so far.

There are so many interesting grains out there to experiment with! In the past, I've made mornings more exciting with rice and quinoa, but I thought farro would be a fun thing to try after seeing it on the breakfast menu at Le Pain Quotidien. Hearty and nutty, farro will keep you full until lunch, and cherries and walnuts are one of nature's best combos!

Sometimes when life gets you down you need something special to brighten your day. Nothing can put a smile on my face quite like a cupcake. Cakes are awesome, but they require things like cutlery and plates. Cupcakes require only a hand. Plus there is something truly special knowing that that little cupcake is yours and yours alone.
