Sometimes when life gets you down you need something special to brighten your day. Nothing can put a smile on my face quite like a cupcake. Cakes are awesome, but they require things like cutlery and plates. Cupcakes require only a hand. Plus there is something truly special knowing that that little cupcake is yours and yours alone.

I have a love/hate relationship with eggplant. Some days it's the best thing ever and other days it's like I've committed a crime and the punishment is eating slimy sponge for lunch. It's my favorite time of year you guys! I unabashedly love Valentine's Day with the passion of a thousand first kisses. Is there a better way to tell someone you love them than through food? I do not know of any better way, friends. So why not make a batch of these sugar cookies, decorate them all fancy pants and give them to your crush/partner/best friend/best dog/best stranger?

I’ll be the first to tell you that I’m not one for leftovers. They honestly freak me out. Sometimes, though, there is a recipe that requires leftovers. Fried rice is one of those recipes. I’d made fried rice in the past using freshly made rice and it just gums up and gets nasty. With some simple planning, fried rice is now one of my favorite meals of the week.

Muffins make me so happy. With a muffin, you get to walk around like you've got your life together. You're one of those healthy people that maybe bikes to work and always has extra safety pins in her bag in case a hem goes rogue. You whip out that muffin from your immaculately organized bag to fuel you through your morning meeting where you'll use your very large brain to impress many people. You're very important.

Some of the best recipes are born out of boredom. That desire to eat something different, something that you’ve never done before but you’re willing to try to make. One night when my mom was bored with plain old broiled/grilled chicken she decided to make her own teriyaki marinade. It was a hit and we’ve been making it ever since.
